My sister gave me some chia seeds recently (because she didn’t like them *eye roll*) and not wanting to waste them, I’ve gradually been trying to add them to random dishes.
They're meant to be good for you and lets be honest, they just look like poppy seeds to me and don't taste much different either!
If you didn’t know, they’re a super food full of omega 3,
calcium, iron, fibre and protein, and a lot other good things. I have a lack of
super foods in my diet so sprinkling a few in homemade energy balls, smoothies
and any baking I do, seems to work pretty well.
They fit in perfectly with these flourless 4 ingredient
cookies – that’s including the chia seeds! If you’re a peanut butter fan, then
you probably have all these ingredients too. You just need peanut butter,
sugar, an egg and a spoonful of these chia seeds!
You don’t have to worry about these cookies spreading,
simply press them down and mark with a fork before baking. The end result is a
perfectly smooth and soft cookie, not crunchy at all.
I used Pip & Nut’s all natural smooth peanut butter, it
has a drippier texture than your normal creamy peanut butter, but the flavour
is still the same and without any palm oil too! Caster sugar is used here as well, however, I’ll next be
trying them with light brown sugar for a fudgier texture.
The chia seeds used are Naturya's organic ones and if you haven't tried chia seeds before and aren't quite sure, then they also do little 15g sachets to try out first!

The recipe makes 12 deliciously soft peanut butter cookies
and they will be out the oven and in your mouth within 20 minutes.
Ingredients:
260g / 1 cup peanut butter
110g / ½ cup caster sugar
1 medium egg
1 tbsp chia seeds

- Preheat the oven to Gas Mark 4/180C/350C and line a baking tray with parchment paper.
- Mix all ingredients in a bowl until well combined. The mixture will come together to form a thick ball.
- Using a tablespoon spoon the cookies into 12 balls and place on lined baking sheet. Space the balls out evenly on the tray – don’t worry as they don’t spread much, if at all!
- Bake in the oven for around 12 minutes, or until the edges start to go brown.
- They will be delicate to touch when removing from the oven. Leave to cool on a wire rack, but definitely feel free to try them when they’re warm!
