This week was just all round disappointing. I really, really
had pegged Liam for the winner this year. But then all that pretty much got
washed away last Tuesday. And then a flip of events to see Stacey get Star
Baker!
I can’t even predict a winner now. But I think Sophie is my
next favourite. She has some genuinely brilliant bakes and seems like a lovely
person to boot.
As for bakes this week, it kind of felt like a mish mash,
but then I guess that’s the point of Forgotten Bakes?
I opted for the technical challenge this week, the Rum Nicky
pie. It felt kinda of Christmassy and mince pie-like to me so I thought it was
a good bet. Plus, I wasn’t feeling all of that lard or baking a Savoy bundt
creation.
This pie was whipped up quickly on a Sunday late afternoon,
I’ll admit. Which meant full on embracing the dark winter evenings now for
photos, yay. I am so not looking forward to even darker evenings, I mean I love
winter and Christmas, but I forgot how much I hated it for photos.
The pie itself was not exactly my cup of tea… It wasn’t so
much the mince pie I was hoping it would be like. But none of it went to waste
though… as nearly all of the pie has now been frozen by my Grandma. So y’know,
some people liked it!
I followed Paul Hollywood’s recipe and I kind of felt like
it was a bit tight on the pastry front. I also didn’t have dried apricot and
ginger, so in attempt to save some pennys and not buy additional ingredients, I
added some mixed dried fruit.
Maybe that was my downfall?
Also, why would Paul even suggest to do a lattice on greaseproof and then try and place it on a pie?! That was just a recipe for disaster from the beginning. Don't listen to Paul. Do it directly onto the pie. It is far easier than you think and not as messy and fiddly.
I can’t remember what bakes are set for this coming week,
but I’m looking forward to putting this week behind us and just forgetting this episode. Anyone else feel the same?
